Breakfast-for-Dinner!

For our eighth meal together, we decided to have breakfast for dinner! A great group has formed around the meals so far this semester, and we at Vegheads are so glad that we've gotten to to meet so many new friends, join in on the conversation about food and sustainability, and eat so much delicious food! Our (organic!) menu this week:

Caramelized apple French toast  (if you use that recipe use half the sugar and syrup- it's sweet enough!)
Roasted breakfast potatoes with herbes de Provence
Tofu scramble with bell peppers, carrots, and spinach
Grapefruit, strawberries, and oranges
Various tea to drink
and assorted vegan pastries including homemade thumbprint cookies with raspberry and chocolate fillings (we used mashed bananas instead of oil), shortbread, and pumpkin-spice cupcakes.

Have a great Thanksgiving, and see everyone in two weeks for "Make-Your-Own Sushi!"

Moroccan!

Last night's Veg Dinner brought our senses somewhere that many of us had never ventured before-- Morocco! Emily planned a wonderful meal for us, and after many hours of cooking, we feasted on eggplant tagine, couscous with veggies and golden currants, delicious tomato and chickpea soup, minty cucumber and tomato salad, freshly prepared Moroccan mint tea made by Martha (who has lived in Morocco), and the incredible m'hancha (the snake)- a coiled pastry of fillo dough, ground almonds, sugar, cinnamon, and orange water.

We ate in Moroccan style, cross-legged on a communal blanket with pillows, and Emily cleansed our hands with rose water to prepare us for the traditionally utensil-less style of eating. Add a little candle light, Moroccan spiritual music playing in the background, and some unexpected dancing, and we had a night to remember!

Indian Food- November 3rd!

This Saturday we enjoyed delicious Indian food, led by the lovely Paige! Here's our menu:

Kachumber (cucumber tomato) salad

Basmati rice
Chana masala
Aloo gobi
Masoor dal
Potato and pea samosas
and chai-spiced almond cookies

Thanks to everyone who came out, helped cook, ate with us, and helped clean up after! Get ready for Moroccan food next week, organized by the wonderful Emily, which we'll eat Moroccan-style- no chairs and no utensils!
