¡La comida estuvo deliciosa!

Mexican night came and went in a haze of fresher than fresh guacamole, delicious raw burritos, Daiya (non)quesadillas, killer lentil tacos, Spanish rice, and Mexican hot chocolate cookies. All 100% plant-based foods. Mmmmmm. We had a smaller crowd this time around (please be sure to mark your calendars when you RSVP, next time!), but we enjoyed getting to know the wonderful people who came! See ya next time!

Get ready for comida Mexicana!

Hey Veggie-Enthusiasts!

We're looking forward to seeing everyone on Saturday for our vegetarian Mexican dinner! On that subject, we're in the process of deciding what to make... Some ideas we've had include:

  • nopal castus stir-fry
  • plantains with a chipotle bean stew
  • nut or veggie tomales with mole sauce
  • vegetable fajitas
  • lentil/tofu and avocado tacos
  • side of fresh homemade salsa and guacamole with tortilla chips
  • horchata

1st Dinner- Mediterranean!

Veg Club hosted its first 100% vegan Saturday night dinner of the year on September 15th, and it was a huge success! We had 31 attendees (!) and our Mediterranean-themed menu included:
  • Greek salad
  • hummus and veggies
  • falafel
  • tabouleh
  • gourmet butter bean casserole
  • and homemade baklava!
Here's us putting the finishing touches on the baklava, while the herbed tofu "feta" is marinating.
